{Gluten-Free} Easy Pumpkin Granola

I love food bloggers.

I mean I should right, I am one!  There are SO many blogs out there with healthy {low-calorie} recipes and I can honestly say that I have been inspired by almost all of them.  One that I absolutely LOVE is the blog Not Enough Cinnamon by self-proclaimed fitness addict and foodie Marie who just so happens to be incredibly sweet!  Her blog has some crazy delicious recipes and the best part is most of them only consist of 4 to 5 ingredients, most of which you probably already have sitting in your pantry.  Oh and did I mention that all of them are made with only unprocessed wholesome ingredients and she also lists the nutritional information and Weight Watcher’s points for each recipe which is super helpful!  On my list to make is her Skinny Chicken Alfredo Lasagna, this Pumpkin Pasta Casserole and these delicious Apple Pie Oatmeal Bars – yum!  There are seriously so many good ones to choose from and if you subscribe to her mailing list, she’ll even send you a FREE e-book with 30 of her most popular recipes!

I am such a huge fan of granola, especially since I love a good crunch with everything that I eat.  I mix this stuff in with my yogurt or smoothies, sprinkle it on top of my salads, make cookies out of it or even add it to baked goods.  My favorite way of eating granola though??  Yep all on its own!  I take this stuff straight to the face.  This pumpkin granola is super quick and easy to make and these flavors just scream FALL.  I mean you’ve got cinnamon, nutmeg, cloves, honey (or maple syrup), PUMPKIN….need I go on?  I also love that this recipe is sugar-free, gluten-free and vegan so it works with many different dietary lifestyles plus I’m all about convenience and if I can throw together something this good in 30 minutes, well hey I’m ALL for it!

Oh but I should probably warn you….prepare to have your kitchen smelling amaaaazing which is perfect this season because who doesn’t want their kitchen filled with all the best scents of Fall?  I mean it’s just so cozy and inviting.  This recipe makes a TON too so it’s perfect for holiday gifts or, if you’re anything like me, you can just jar it up and keep it on hand for breakfast every morning.  I like to keep my own little jar at work for those mid-day cravings, hey you know we all get them!  So grab all the ingredients for this delicious pumpkin granola and go make this recipe ASAP!
