These Quinoa Egg White Breakfast Wraps are super easy to make, are packed with tons of protein and taste super flavorful!
They are also perfect to grab on-the-go! We know how busy mornings can be so having something simple you can make and take with you in the car is often times such a lifesaver. Plus you’ll be feeling perfectly full and satisfied through the afternoon and can even enjoy any of the leftover quinoa for lunch. Trust me, it’s THAT good! Starting your morning with a high protein breakfast not only boosts your metabolism, but will definitely keep you energized throughout the day. And if you love your morning workouts like I do then you’ll sure thank me for this recipe – this makes a great post-workout meal!

But back to these wraps! You guys will seriously love all the delicious ingredients like cumin, salsa, cilantro and avocado that are just perfect for spicing up the quinoa and egg whites. These are some of my favorite flavor combinations and they really give a fun Mexican flare to the whole wrap (or burrito as some might call it!)
To make the quinoa, I simply cooked it per the package instructions then added cumin, salsa and chopped cilantro for added flavor. The egg whites I scrambled over medium heat along with a pinch of salt and pepper, but you could also just let them cook uniformly in the skillet making them easier to wrap up. You should definitely make this recipe to your liking! Then using a whole wheat wrap, I combined a handful of spinach leaves, quinoa, scrambled egg whites along with some shredded cheese and avocado which is completely optional yet highly recommended.

The other great thing about these wraps is that you can really make these all your own! Use your favorite jarred salsa to mix in with the quinoa – some fun ideas could be black bean corn salsa, roasted chipotle salsa or you could even make your own. For these wraps I simply used my favorite chunky salsa with medium heat as I didn’t want them too spicy and just loved all the flavors it had, especially when combined with the cumin and cilantro.

Quinoa Egg White Breakfast Wrap Print Serves: 4 Servings Ingredients
- ½ cup uncooked quinoa
- ½ tsp. cumin
- ¼ cup your favorite salsa
- 1 Tbsp cilantro, chopped
- 1 cup AllWhites 100% liquid egg whites
- Pinch of salt and pepper
- 2 cups baby spinach
- 4 (10 inch) whole wheat tortillas
- Optional toppings: avocado, tomatoes, shredded cheese
- To make the quinoa, add a ½ cup of water to a small saucepan and thoroughly rinse the quinoa. Add the rinsed quinoa to the saucepan and bring to a boil, cover and reduce heat and simmer for about 13 minutes. Remove from heat, keeping quinoa covered, and allow it to sit for about 5 minutes then fluff quinoa with a fork.
- Mix in cumin, salsa and cilantro with the quinoa and set aside.
- Spray a nonstick skillet with cooking spray over medium heat and add egg whites, stirring frequently until eggs are set, about 2 to 3 minutes.
- Top tortilla with about a ½ cup spinach leaves, ¼ cup of quinoa, scrambled egg whites and any other toppings you wish to add. Tightly roll up tortilla, slice and enjoy!
